The bread soaks up the egg mixture, resulting in a rich, custardy texture, while the sausage adds savory flavor and the cheese creates a gooey, melty top. This super-simple sausage strata is a savory breakfast casserole made by layering bread, cooked sausage, onions, peppers, eggs, milk, and cheese, then baking until golden and puffed.

Instructions

  1. Grease or lightly apply non-stick spray to a 9"x 13" glass baking dish, or an aluminum half tray. Cut bread into about 1.5" cubes and place the bread cubes in the baking dish.

  2. In a large skillet over medium heat, crumble and brown the sausage. Remove to a plate and set aside. In the same skillet, without wiping it out, place the diced onions and peppers. Saute until the onions are translucent and the peppers softened. Return the sausage to the skillet and combine. Remove from heat.

  3. Spread sausage and pepper mixture over the bread cubes and then sprinkle with the cheese.

  4. In a large bowl, combine the eggs, mustard powder, and milk. Whisk to combine. Pour the mixture over top of the sausage mixture making sure to pour evenly over the dish so that all the bread cubes absorb the egg mixture.

  5. Cover the baking dish tightly with plastic wrap or a lid and refrigerate overnight. This will permit the bread to fully absorb the egg mixture resulting in a rich custard-like texture to the bread cubes.

  6. In the morning:

    Preheat oven to 350°F 🔥 

  7. Bake, uncovered, for 30-35 minutes, or until a butterknife inserted in the middle comes out clean. Let stand for 5-10 minutes before serving.
