    This hot dog sauce is a thick, rich, meaty and spicy sauce to compliment most any hot dog.

    1. In a large stockpot, sautè the onion in the olive oil until tender and translucent, but not browned.

    2. Crumble the ground beef and ground pork into the pot and immediately add just enough water to cover the cover the crumbled meat mixture. (Do not brown). Bring meat mixture to a boil, reduce heat and simmer for one hour, uncovered, adding more water only if necessary. Working with a wooden spoon, continue working on breaking up any clumps of meat as it simmers to achieve a uniform consistency.

    3. Add the remaining ingredients and cook, over low heat, uncovered, just simmering for 2 more hours or until desired consistency is obtained.

    4. For a thinner sauce, add more water halfway through the final 2 hours. For a thicker sauce, continue simmering beyond the final 2 hours.

    5. Allow sauce to cool, portion into zip-lock or vaccuum bags, and freeze until ready for use.
