- 3 pounds of Baby Yukon Gold potatoes (whole, skin-on)
- 2 each of small shallots (sliced thinly)
- 1/3 cup of Extra Virgin Olive Oil
- 1/3 cup of white wine vinegar
- 3 Tablespoons of dijon mustard
- 2 teaspoons of hot sauce (recommended: Frank's Red Hot)
- 1 teaspoon of honey
- 1/4 cup of tarragon leaves
- Dash of Kosher Salt
