This potato salad is my go-to side dish for Chicken Choucroute. I serve it on the same platter, family-style. However, it would serve as a great side dish to any meal, or even served alone.

Place potatoes in a pot and cover with 2" of water, season generously with Kosher salt. Bring to a boil, then immediately reduce heat to a simmer. Cook potatoes until fork-tender, about 20-25 minutes, drain, let sit to dry.

Whisk shallots, oil, vinegar, mustard, hot sauce, and honey in a large bowl. Season with salt to taste. Add hot potatoes and toss until they are completely coated and have absorbed some of the dressing. Allow the potatoes to sit in the dressing for at least 15 minutes or up to an hour. Right before serving, add tarragon leaves and toss.

Place potato salad on a large platter just to the side of the Chicken Choucroute. Serve family-style by placing the platter in the middle of the dining table. Dig in!
