Ingredients
  • 8 ounces of uncooked soba noodles (buckwheat noodles)
  • 1 pound of sushi-grade tuna steak
  • 1 teaspoon of salt (divided)
  • 1 teaspoon of coarse black pepper (freshly ground)
  • 1 cup of English cucumber (finely chopped)
  • 1 carrot (shredded)
  • 1/2 cup of radishes (julienne-cut)
  • 1/3 cup of red bell pepper (finely chopped)
  • 1/4 cup of scallions (thinly sliced on the bias)
  • 3 Tablespoons of rice vinegar
  • 2 Tablespoons of soy sauce (plus some for brushing tuna steaks)
  • 1 Tablespoon of peanut oil
  • 1 1/2 teaspoons of dark sesame oil
  • 1/2 teaspoon of crushed red pepper
  • 2 Tablespoons of sesame seeds (toasted)
  • 1 teaspoon of sesame oil (for tossing noodles)
  • 1 medium avocado, sliced (for garnish)
  • 1/2 cup edamame beans, shelled (for garnish)
Instructions
  1. Bring a pot of water to a boil and cook soba noodles according to package instructions (typically 3-5 minutes). Drain and rinse under cold water to stop cooking and remove excess starch. Toss with 1 tsp sesame oil to prevent sticking, then set aside.

  2. Pat the tuna steak dry with a paper towel. Lightly brush the tuna steak with soy sauce, and season on both sides with half of the salt, fresh-cracked black pepper, and toasted sesame seeds.

  3. Heat a large non-stick skillet over med-high heat. Coat the pan with cooking spray. Place the tuna in the pan and cook for about 3 minutes on each side to sear or until desired doneness. Set tuna aside to rest.

  4. In a small bowl, prepare the dressing by whisking together the rice vinegar, soy sauce, peanut oil, dark sesame oil, remaining salt, and crushed red pepper.

  5. In a medium bowl, combine the noodles, the dressing, cucumbers, carrots, radishes, and red bell peppers. Toss to combine.

  6. Arrange the noodles equally on six plates, about 1 cup each. Cut the tuna steak into 6 equal pieces, then slice each of the 6 pieces into slices of equal thickness for plating. Place the tuna slices on top of the soba noodles.

  7. Garnish each plate with the sliced scallions, avocado, and edamame.
