Instructions

  1. Cut the top off of the pineapple and using a sharp knife, cut downward, following the curvature of the pineapple to remove the outer prickly skin. Core the pineapple to remove the woody center and slice into 1/2" thick rings.

  2. Preheat grill to high. Spray lightly with cooking spray or oil with tongs and a paper towel dipped in olive oil. Reduce grill heat to medium/high and grill pineapple rings until grill marks are established on both sides. Move the pineapple rings as minimally as possible and only turn once to prevent them from coming apart. Set aside, allow to cool.

  3. In a large bowl, combine all the other ingredients. Once cool, dice the grilled pineapple rings into 3/4" chunks, and toss with the other ingredients to combine.

  4. Cover the bowl tightly with a lid or plastic wrap and place in the refrigerator for at least 1 hour for flavors to combine before serving.
