Leftover Easter Ham taking up space in the fridge?? Try this super-simple ham salad, which can be made with ingredients you probably already have on hand!

Here’s what you need:

  • Leftover Easter Ham – bone-in, boneless, spiral-sliced, doesn’t matter. No leftovers? A ham steak works great, too!
  • Celery and Onion – I recommend a yellow or Vidalia onion. The celery adds a nice crunch and lots of flavor.
  • Hard Boiled Eggs – they add a certain texture and richness.
  • Relish – some like it sweet, some prefer dill, or even rough-chop a pickle. If you aren’t a fan of relish, leave it out. There’s no rules here!
  • Mayonnaise – being from the south, it’s only Duke’s for me, but if you prefer Hellman’s or Miracle Whip, knock yourself out.
  • Mustard – yep, it may sound odd, but it adds a nice flavor contrast. I recommend Dijon, but Spicy Brown or even yellow prepared work well.

Instructions

  1. Place diced ham, coarsely-chopped celery, onion, and hard-boiled egg into a food processor and pulse 25-30 times, or until finely minced and thoroughly incorporated. Scrape down sides periodically if needed. 

  2. Combine mayonnaise, mustard, and relish in a medium-sized bowl. Add minced ham mixture and gently fold in with a rubber spatula or wooden spoon until thoroughly mixed.

  3. Place a lid on the bowl or cover with plastic wrap and chill for a few hours before serving. Ham salad will keep in the fridge for 4-5 days. Freezing is not recommended as mayonnaise tends to separate when it thaws.

  4. Serve on fresh croissants, or bread of choice, topped with lettuce, tomato, and cheese if desired. (Also great on crackers as a dip)!! Enjoy!
