Description

This quick, easy and delicious Beef Stroganoff is an American twist on a classic Russian dish.

Ingredients
  • 1.5 pounds of beef (tender cuts like sirloin or filet) (cut into thin strips)
  • 2 Tablespoons of olive oil
  • 1 medium onion, sliced
  • 8 ounces fresh mushrooms (button or cremini) (sliced)
  • 2 cloves of garlic, minced
  • 1 Tablespoon of all-purpose flour (plus more for dusting)
  • 1 cup of beef broth (low sodium)
  • 1 10.25 oz can of Cream-of-Mushroom soup (condensed)
  • 1 cup of sour cream
  • 1 teaspoon of dijon mustard
  • Salt and pepper (to taste)
  • Cooked Egg Noodles (as required)
  • Parsley, chopped (for garnish)
Instructions
  1. Slice the sirloin or filet steaks into 1/4" strips. Season with salt and pepper to taste, and then dust in flour.

  2. In a large heavy skillet, or cast iron Dutch Oven, add the olive oil and utter and heat until butter is melted. Working in batches, being careful not to over-crowd the skillet, quickly brown the beef on both sides and remove to a plate to rest.

  3. Working in the same skillet, add the sliced onions and mushrooms to the pan drippings. Sauté until the onions are just crisp-tender and slightly translucent. Add the minced garlic and sauté an additional 1 minute. Sprinkle the additional Tablespoon of flour, stir until combined, and then return the steak strips to the skillet.

  4. Add the beef broth and mushroom soup, and combine while scraping up any bits from the bottom of the skillet.

  5. Continue to sauté until the steak strips reach desired doneness, approximately 3-5 minutes. Season with salt and pepper to taste, and stir in the sour cream in the last 1 minute of cooking time.

  6. Serve immediately over egg noodles or mashed potatoes, and garnish with a pinch of chopped parsley.

Note

You can use cheaper cuts of beef, but for best results use a tender cut such as sirloin or filet.
