Slice the sirloin or filet steaks into 1/4" strips. Season with salt and pepper to taste, and then dust in flour.

In a large heavy skillet, or cast iron Dutch Oven, add the olive oil and utter and heat until butter is melted. Working in batches, being careful not to over-crowd the skillet, quickly brown the beef on both sides and remove to a plate to rest.

Working in the same skillet, add the sliced onions and mushrooms to the pan drippings. Sauté until the onions are just crisp-tender and slightly translucent. Add the minced garlic and sauté an additional 1 minute. Sprinkle the additional Tablespoon of flour, stir until combined, and then return the steak strips to the skillet.

Add the beef broth and mushroom soup, and combine while scraping up any bits from the bottom of the skillet.

Continue to sauté until the steak strips reach desired doneness, approximately 3-5 minutes. Season with salt and pepper to taste, and stir in the sour cream in the last 1 minute of cooking time.

Serve immediately over egg noodles or mashed potatoes, and garnish with a pinch of chopped parsley.
