Ingredients
Instructions
-
Heat oil in a large non-stick skillet over med/high heat.Â
-
Add onion and green pepper and stir until just firm-tender and onion is translucent, 2-3 minutes. Add garlic and stir until fragrant, about 1 minute more.
-
Add tomatoes, Worcestershire sauce, red wine vinegar, dried basil and bring to a boil.
-
Salt and pepper both sides of the red snapper filets and add them to the skillet. Reduce heat to a simmer. Don't attempt to move or flip filets, instead spoon the simmering mixtures over the filets, then cover and continue to simmer for 12 minutes or until filets become flaky.
-
Carefully plate the filets on 4 plates, and spoon the skillet sauce over the filets. Garnish with basil sprigs (if desired).
