In the same skillet, without wiping it out, add butter and melt. Stir in garlic and cook until fragrant, about 1 minute. Add tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst, then add spinach and cook until spinach wilts.
3 Stir in heavy cream and parmesan cheese and bring the mixture to a simmer. Reduce heat to low and continue simmering until sauce is slightly reduced, about 3-5 minutes. Return chicken to skillet and simmer until heated through and internal temperature reaches 165°F, about 5-7 minutes.
4 Garnish with parsley and serve with lemon wedges.
