Creamy Tuscan chicken is a flavorful dish with chicken breasts cooked in a rich, creamy sauce with sun-dried tomatoes, spinach, garlic, and Parmesan cheese. Ingredients
  • 4 each of boneless, skinless, chicken breasts
  • 1 Tablespoon of olive oil
  • 1.5 cup of cherry or grape tomatoes (halved)
  • 3 cups of baby spinach (stems removed)
  • 1/2 cup of heavy cream
  • 1/4 cup of parmesan cheese (freshly grated)
  • 3 Tablespoons of butter (unsalted)
  • 3 cloves of garlic (minced)
  • 1 teaspoon of dried oregano
  • Salt and pepper (to taste)
  • lemon wedges (for serving)
  • chopped fresh parsley (for garnish)
Instructions
  1. In a large skillet, over medium heat, heat oil. Season chicken on both sides with salt, pepper, and oregano. Add chicken to skillet and cook until golden brown and no longer pink, approx. 8 minutes per side. Remove chicken to a plate and allow to rest.

  2. In the same skillet, without wiping it out, add butter and melt. Stir in garlic and cook until fragrant, about 1 minute. Add tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst, then add spinach and cook until spinach wilts.

  3. Stir in heavy cream and parmesan cheese and bring the mixture to a simmer. Reduce heat to low and continue simmering until sauce is slightly reduced, about 3-5 minutes. Return chicken to skillet and simmer until heated through and internal temperature reaches 165°F, about 5-7 minutes.

  4. Garnish with parsley and serve with lemon wedges.
