Description

Juicy salmon fillets are coated in a rich bourbon and brown sugar glaze, and then pan-seared to perfection. The glaze, made with bourbon, brown sugar, soy sauce, garlic, and a hint of mustard, caramelizes beautifully for a sweet-savory finish. Perfect for a quick yet elegant meal!

Ingredients
  • 4 Salmon Fillets (skinless, 6-ounces each)
  • 3 Tablespoons of brown sugar
  • 3 Tablespoons of bourbon
  • 2 Tablespoons of soy sauce
  • 1 Tablespoon of dijon mustard
  • 1 Tablespoon of grated ginger
  • 1 Tablespoon of lime juice
  • 3 cloves of garlic (minced)
  • 1/4 teaspoon of black pepper
  • toasted sesame seeds (for garnish)
  • scallions (for garnish)
  • lemon wedges (for garnish)
Instructions
  1. Combine brown sugar, bourbon, dijon mustard, soy sauce, ginger, lime juice, garlic, and pepper in a gallon size zip-loc bag. Add fish to the bag, and seal. Marinate in refrigerator for 1 ½ hours.

  2. Heat a large non-stick skillet over med/high heat. Coat pan with cooking spray. Add fish fillets and marinade to pan. Cook fish 4 minutes on each side, or until fish flakes easily with a fork.

  3. Place the skillet directly under the broiler with the rack on the top level for 2-3 minutes to caramelize the glaze and crisp the top of the fillets. Keep a close eye on it, as the sugars in the glaze will burn quickly if left too long.

  4. Plate fillets and drizzle with marinade from skillet. Sprinkle each fillet with toasted sesame seeds and chopped scallions for garnish. Serve with lemon wedge.
