Ingredients
  • 1 Avocado, pitted, sliced in half (finely diced)
  • 2 Tablespoons of lime juice (fresh squeezed)
  • 1/4 cup of red onion (finely diced)
  • 1/4 cup of green bell pepper (finely diced)
  • 1/4 cup of red bell pepper (finely diced)
  • 1/4 cup of corn
  • 2 Roma tomatoes (diced)
  • 1/8 cup of fresh cilantro (chopped)
  • 1 Jalapeno pepper (seeded, finely diced)
  • 2 cloves of garlic (minced)
  • 2 teaspoons Extra Virgin Olive Oil
  • Salt and pepper (to taste)
Instructions
  1. In a small bowl, combine avocado and olive oil. Set aside.

  2. In a medium bowl, combine all remaining ingredients, mix well, and gently fold in the avocado mixture.

  3. Cover tightly with plastic wrap and refrigerate until flavors combine, at least 30 minutes. Stir before serving.
