  1. Heat oil in a large non-stick skillet over med/high heat. 

  2. Add onion and green pepper and stir until just firm-tender and onion is translucent, 2-3 minutes. Add garlic and stir until fragrant, about 1 minute more.

  3. Add tomatoes, Worcestershire sauce, red wine vinegar, dried basil and bring to a boil.

  4. Salt and pepper both sides of the red snapper filets and add them to the skillet. Reduce heat to a simmer. Don't attempt to move or flip filets, instead spoon the simmering mixtures over the filets, then cover and continue to simmer for 12 minutes or until filets become flaky.

  5. Carefully plate the filets on 4 plates, and spoon the skillet sauce over the filets. Garnish with basil sprigs (if desired).
